Fine cassava flour from Kinazi Cassava Plant (KCP) in Rwanda, the country's leading cassava miller. It is wet-milled from freshly harvested tubers grown by smallholder farmers in the Land of a Thousand Hills, giving a very light, clean flour that is certified gluten-free by the Rwanda Standards Board. Akanozo composite flour — ifu y'imvange, a blended flour built around soya beans and cereals — in a 2.2 lb (1 kg) pack. It is a good source of plant protein, B vitamins (including riboflavin, folate, B6 and thiamin) and minerals such as iron, zinc, magnesium, phosphorus and calcium, which makes it popular as a nourishing family porridge and a weaning food. Whisk into water or milk and simmer, stirring, into a smooth uji, then sweeten to taste. Reseal and store in a cool, dry place.
